Respect is the strategy adopted by Casearia Montecoppe in producing Parmigiano-Reggiano cheese of superior quality.
It begins with the respect for the environment. Located completely inside the regional parkland, Montecoppe benefits from the strict protection given to these lands, and the company itself has adopted respectful agricultural methods in tune with the environment. The cattle, left free to graze in the fields tended by the agricultural company, eat only nutritionally rich hay and cereals, in firm respect of recognised environmentally friendly farming methods which are certified and ensure that all produce is traceable (Disciplinare Tecnico della Tracciabilità e Certificazione di Filiera).
There is also a strong respect for tradition, crafts handed down from generation to generation by people who have lived endlessly in these lands. Montecoppe’s Parmigiano-Reggiano is, therefore, only made in one way: according to ancient artisan traditions. |
