The Casearia Montecoppe dairy company, of which the historic cheese factory is part, covers approximately 220 hectares of land inside the regional park of the Carrega forest, and is a perfect example of short chain agricultural activity. The company is in fact a complete cycle - maximum control over agricultural activity is guaranteed because everything is produced by the same company, from the fodder and cereals that feed the cattle, to the cattle which are bred specifically to make milk which is then transformed into Parmigiano-Reggiano cheese.
The barn holds mainly Frisona breed cows, raised free range in an environment that, in total respect of nature, offers feed that nourishes the cattle and confers to the milk (and consequently to the cheese) an extraordinary aromatic taste.
